Craft Beer Pairing: Rob Costa of the Massachusetts Beverage Alliance pairs Notch, Left of the Dial IPA with 3 Restaurant Chef Chad Terry’s Jambalaya.  Rob prefers to pair spicy-based dishes with ales that have much hops characteristics, but will not overpower the Creole flavors in this dish.  This ale uses much English fossil malts.  This ale features citrus and pine notes, and is light in volume.
