The Chefs’ Table Series: Halfway Cafe – Grilling in the Home

Chef Ernesto Yanez visits the kitchen studio of The Chefs’ Table Series and explains how to make turkey tips using the cooking technique grilling. Chef also demonstrates the best ways to make vegetable brown rice and broccoli. He shares the secret recipe for the Halfway Cafe’s buzz sauce. Co-host Joe Murphy tells the audience great cooking tips when it comes to grilling in the home kitchen.

The Chefs’ Table Series: Halfway Cafe – Grilling

Chef/Owner Steve LaCount of Chiara Bistro shares his chef’s tip for Chicken under a Brick. Chef Steve shares another tip of his: how a food mill can be used to make purees, mashed potatoes, cooked pumpkin, carrots, potato gnocchi and more.

Co-host Carol O’Connor visits John Grasso of The Halfway Cafe; he shares the history of The Halfway Cafe, and shares some funny stories with Carol.

Carol and Joe explains the mission of the Chefs Table Foundation and how the Foundation wants to help others


Place the grilled turkey tips in a sauce called “Buzz”  –  ingredients:
In sauté pan over low heat, melt 4oz unsalted butter.
Add ½ cup minced fresh garlic.  Cook just to soften (do not brown).
Add 1 ½ Tbsp Crushed Red Pepper, ½ cup Hot Sauce, and 2 ½ clover Honey, blend well.
Add 2 tsp chopped fresh Thyme.
Allow to simmer gently 10 minutes.
